Coconut Cupcake Recipe

125gms softened butter

1tsp finely grated lemon rind

165gms caster sugar

2 eggs

40gms desiccated coconut

185gms self-raising flour

125ml milk



1.  Preheat oven to 180C. Line 12 hole muffin pan with cupcake cases

2.   Beat together butter, rind, and sugar until light and fluffy

3.   Beat in eggs, one at a time

4.   Stir in desiccated coconut, sifted flour and milk

5.   Divide mixture into cupcake cases and bake for approx. 30 mins.

6.   Place on wire rack to cool


Optional pink icing

200gms sifted icing sugar

1 tablespoon approx of warm water

Pink food colouring

2 tablespoons desiccated coconut 


1. Sift ing sugar into small bowl

2. Gradually add water until icing is thick enough to coat the back of a spoon

3. Add food colouring to designed effect

4.  Spread over cold cupcakes

5.  Sprinkle with coconut
