How to get flat cupcakes for decorating

It is particlularly annoying when you want a flat surface to decorate your cupcakes that you find they have peaked in the middle. However, the answer is very simple - THE OVEN IS TOO HOT
Many of us today have fan assisted ovens and when baking our cupcakes keep the temperature at the non fan assisted heat. This has the effect of the cake surface cooking before the mixture in the middle has had a chance to rise causing the cupcake to peak. Try baking your cupcakes at 160/170C and cook for a little longer.
If all else fails just cut the top off.
