Mexican Paste Recipe

225g (8oz) Icing Sugar

3 x 5ml tsp gum tragacanth

1 x 5ml tsp liquid glucose

6 x 5ml tsp cold water

 

1. Mix the icing sugar and gum tragacanth together in a mixing bowl.

2. Add the liquid glucose and water and knead well until smooth.

3. Tightly wrap in a plastic food bag and leave for 24 hours before using.
